Update openvr setting names to match updated VTK

Ken Martin requested to merge ken-martin/paraview-superbuild:update_openvr_setting_names into master

VTK MR vtk/vtk!8348 (merged) renamed VTK_ENABLE_OPENVR_COLLABORATION to VTK_ENABLE_VR_COLLABORATION so we need to update the setting here to reflect that change.

Note VTK MR vtk/vtk!8421 (merged) also relates to this change as it finished what was started in the prior MR.
