Tests: Update RunCMake.FindPkgConfig gobject-introspection expectation

Vladimir Petko requested to merge vpa1977/cmake:update-gobject-introspection-test-assertion into master

gobject-introspection 1.79+ uses binaries with an arch-specific prefix, such as /usr/bin/x86_64-linux-gnu-g-ir-scanner.
