Added missing libraries to SimpleCocoaVTK Xcode project

Recent changes to VTK require linking to additional libaries.

@seanm I've cherry-picked the vtkCocoaRenderWindow commit into !9372 (merged) after verifying that it indeed fixes #18559 (closed)

Why? I think this one can just be merged as-is, no?
