docs: fix sphinx documentation generation
For a while now the vtk documentation on readthedocs was not updated[1].
It seems that the issue comes from sphinx-autodoc and it is already reported upstream.
Using the recommended suggestion from the issue above we pin one of the dependencies sphinx-autodoc.
