CI: windows build clean build processes

Vicente Bolea requested to merge vbolea/vtk-m:windows-fix into master

This workaround avoids the often observed bug of windows gitlab runner instances hanging due to a not being able to de delete the CI_PROJECT_DIR after the build because some process its holding a file opened inside it.
