build: use `built` to gather information

Ben Boeckel requested to merge ben.boeckel/ghostflow-director:use-built-crate into master

This simplifies a lot of the metadata-gathering code used in place for a crate which does this automatically.

The string feature of clap is needed to support taking a String as the version number.
