Clean up a bunch of unneeded palette junk

Remove a bunch of palette changes in the vitals monitor UI that are not needed.

@aaron.bray, I had these changes locally, not sure if you missed a force-push of !9 (merged) or (seems more likely from what I can tell) I neglected to push them. Anyway, the changes are pretty straight-forward; just tidying, no visible effect.
