Provide the \icon command only if it does not exist

Cory Quammen requested to merge cory.quammen/paraview-guide-ce:icon_cmd_fix into master

The \icon command seems to not be defined in this file on some systems, but it is defined on other systems. Using \providecommand to define it will only define the \icon command if it does not already exist, solving making it work on all systems.
