Update MPICH to version 4.1.1, allowing big-message support in VTK.

MPICH 4.x is now the default on Fedora 37+ and Ubuntu 22.04+, and a bug discovered by VTK's test suite has been fixed.

A pending VTK MR will take advantage of the new features.
