update testselectenclosedpoints to not use scalar color

Ken Martin requested to merge ken-martin/vtk:update_select_enclosed_points into master

the old test used scalar color while setting the color to red. Update to not use scalar color and set color to blue. The motivation is to enable the following MR to merge
