pqPVApplicationCore override in pv based app

ParaView based app already can provide a custom MainWindow. Extend that to ApplicationCore: this allows to override some default of the pqPVApplicationCore.

One use case: defining the settings file name. As it is used early in the init process, overriding the application core is the only way to change the behavior.
