ci,doxygen: remove unneeded archive generation

I have noticed that we are creating the same archive twice in the doxygen/documentation build. Removing second archive creation.

We already create the archive few line below with the command: $LAUNCHER cmake --build $GIT_CLONE_PATH/build --target ParaViewDoc-TGZ &> $GIT_CLONE_PATH/doxygen_output.log
